Usage and Dosage of Edible Gelatin

2025-08-22

Edible gelatinis a Food Ingredient made from the hydrolysis of animal collagen. It is mainly used as a thickener, stabilizer, or gelling agent, and is commonly found in foods such as candies, jellies, and yogurt, as well as in pharmaceuticals likecapsules and ointments. The recommended addition amount in food is 1%-10%, which can be adjusted according to specific formulas; for medicinal purposes, it must be used strictly in accordance with medical advice or instructions. The following are specific usage methods and precautions:

  1. Main Uses
  2. Food Industry

Thickening: Used in soups, sauces, mousses, etc., to improve texture (dosage is usually 1%-5%).

Shaping: When making jellies, puddings, and gummies, it needs to be combined with other ingredients (such as fruit acids and sugar) (dosage 3%-10%).

Stabilizing: Added to dairy products (e.g., yogurt) to prevent stratification (dosage 0.5%-2%).

  1. Pharmaceutical Industry

Used as capsule shells, ointment bases, etc., and must be used according to pharmaceutical formulas or medical advice.

  1. Usage Methods
  2. Dissolution Method

Soak in cold water for 10-15 minutes to soften, then heat to 40-60°C to dissolve. Avoid direct high temperatures to prevent clumping.

When mixing with ingredients such as sugar and acid, the order of addition must be controlled (e.g., fruit acid should be added after the gelatin is dissolved).

  1. Shaping Conditions

The solution needs to be refrigerated (4-10°C) to solidify, and the time varies according to concentration (usually 1-4 hours).

  2. Recommended Range for Food

   Jelly/Pudding: 3%-5% (for a chewy texture).

Gummies: 5%-10% (hardness increases with concentration).

Dairy Products: 0.5%-1.5% (excessive amounts may affect flavor).

  1. Pharmaceutical Use

Medicinal gelatin must be used in accordance with production standards or medical advice; do not adjust the dosage by yourself.

  1. Precautions
  2. Allergy Risk: Some people are sensitive to animal-derived gelatin, so pay attention to the ingredient list.
  3. Storage Conditions: Keep unopened products away from light and moisture; after opening, seal and refrigerate, and use as soon as possible.
  4. Avoid Excess: Excessive addition may cause food to become too hard or have a sticky texture.
  5. Medicinal Instructions: If used in pharmaceuticals (such as capsules), follow medical advice and seek medical attention promptly if discomfort occurs.

The reasonable use of edible gelatin can improve the texture and stability of food, but it is necessary to strictly follow the proportion to ensure safety and effectiveness.
